Yuzu Pulled Chicken Bao, Sriracha Potatoes & Slaw

Toaster, microwave or kettle-friendly – this is dinner without the cooking. These pillowy bao buns are loaded with yuzu pulled cooked chicken and crunchy cucumber. Serve them with creamy soy slaw and sriracha potatoes for a spicy finish.

Now, let's get started!

Chop your waxy potatoes into quarters lengthways

Add the chopped potatoes to a large heatproof bowl, then cover the bowl with cling film and pierce a few holes in the top with a fork

Put the bowl in the microwave for 8-9 min or until the potatoes are fork-tender

While the potatoes are cooking, combine your yuzu dressing with half your mayo, half your soy sauce and half your rice vinegar (you'll use the rest later!)

Add your cooked shredded chicken with a generous pinch of salt and pepper and give it a good mix up until well combined – this is your yuzu pulled chicken

Combine your remaining rice vinegar, remaining mayo and remaining soy sauce with 1 tsp [1 1/2 tsp] [2 tsp] sugar in a large bowl

Add your carrot & cabbage slaw mix and give it a good mix up until well combined – this is your soy slaw

Slice some of your cucumber finely (9 slices per person!) then roughly chop the remaining cucumber

Add the roughly chopped cucumber to your soy slaw and mix until combined

Once the potatoes are tender, add your sriracha (can't handle the heat? Go easy!) with a small knob of butter and a small pinch of pepper – these are your sriracha butter potatoes

Pierce your bao bun packet[s] with a few holes and microwave for 1-2 min

Load the warmed bao buns with the sliced cucumber and yuzu pulled chicken

Serve the sriracha butter potatoes and soy slaw to the side
