Warm Halloumi Salad With Green Tomato Dressing
This tangy salad is all about speed. You'll pack it with pepper, courgette, tomato, and red onion, before topping with golden halloumi. Give it some green tomato dressing and pumpkin seeds, and dinner's ready to go.

Preheat the grill to high
Top, tail and slice the courgette[s] on a diagonal
Deseed the pepper[s] (scrape the seeds and pith out with a teaspoon) and cut into thick strips

Add the sliced courgette and pepper strips to a large baking tray with a drizzle of olive oil and pinch of salt
Give everything a good mix up and put the tray under the grill for 8-10 min until softened and charred – these are your grilled vegetables

Whilst the vegetables are under the grill, slice the tomato[es] into wedges
Peel and chop the red onion[s] into wedges
Cut the halloumi into 6 [12] slices

Combine the green tomato chutney with the juice of 1/2 [1] lemon, 2 tbsp [4 tbsp] olive oil and a pinch of salt and pepper in a small bowl – this is your green tomato dressing
Cut the remaining lemon into wedges

Heat a large, wide-based pan (preferably non-stick) with 1 tbsp [2 tbsp] olive oil over a high heat
Once hot, add the onion and tomato wedges
Cook for 3-4 min or until starting to soften

Once the onion and tomato wedges are starting to soften, add the halloumi slices
Cook for 1-2 min on each side or until golden

Wash your lettuce, then pat it dry with kitchen paper and shred roughly
Divide the shredded lettuce between your serving plates

Top the shredded lettuce with the grilled vegetables and softened tomatoes and red onion wedges
Serve the golden halloumi slices over the vegetables
Drizzle everything with the green tomato dressing and garnish with the pumpkin seeds and a lemon wedge
