Wagyu Cheeseburger With Caramelised Onion & Garlic Mayo
This burger's hard to beat. Rich wagyu beef patties, perfectly caramelised onions, sharp cheddar and garlic mayo – now we're talking. Serve with chips and get stuck in for the ultimate night in.

Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Cut your potatoes (skins on) into fries
Add the fries to a baking paper-lined baking tray (or two!) with a drizzle of vegetable oil and a pinch of pepper and give everything a good mix up
Put the tray[s] in the oven for an initial 25 min or until crisp and golden

Meanwhile, peel and finely slice your red onion[s]
Heat a large, wide-based pan (preferably non-stick with a matching lid) with a drizzle of olive oil over a high heat
Once hot, add the sliced onion with 1 tsp [1 1/2 tsp] [2 tsp] sugar, half your balsamic vinegar (you'll use the rest later!) and a large splash of water
Cook the onions for 8-10 min or until they have softened and caramelised

While the onions are cooking, slice your cheddar
Combine your mayo with most of your roasted garlic paste (save a little for a garnish!) in a small bowl with a splash of water and a small pinch of salt and pepper – this is your garlic mayo

Wash your salad, then pat dry with kitchen paper
Reserve a handful of salad for later
Transfer the remaining salad to a bowl with the remaining balsamic vinegar and a little drizzle of olive oil – this is your balsamic rocket salad

Once caramelised, transfer the onion to a plate and reserve the pan – this is your caramelised onion
Wipe the reserved pan clean, then return it to a high heat
Once hot, add the wagyu burger patty[ies], press down firmly with a spatula and cook for 5-6 min or until lightly charred
Tip: Cooking for 5? Use 2 pans!

Once lightly charred, flip the patty[ies] and reduce the heat to medium-high and cook for a further 3-4 min or until browned on both sides
Once browned, top with the sliced cheese, cover with a lid and cook for a final 2 min or until the cheese has melted and the burger[s] is cooked through (no pink meat!) – this is your cheesy wagyu patty
Transfer the cheesy wagyu patty to a plate and set aside to rest for 2-3 min

While the patties are resting, slice your brioche bun[s] in half (if required!)
Once the fries have had an initial 25 min, add the brioche halves to the baking tray[s], cut side up, on top of the fries and return to the oven for 2-3 min or until warmed through

To build your burger, top each warmed brioche base with the reserved salad, a cheesy wagyu patty, the caramelised onion and a warmed brioche lid – this is your wagyu cheeseburger with caramelised onion
Drizzle the remaining roasted garlic paste over the garlic mayo and serve it to the side with the fries and balsamic rocket salad
