Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Cut your potatoes (skins on) into fries

Add the fries to a baking paper-lined baking tray with half of your ground paprika, a drizzle of vegetable oil and a small pinch of salt and pepper

Give everything a good mix up and put the tray in the oven for an initial 20-25 min or until golden and crisp

Peel and finely slice half your brown onion[s]

Dice the remaining onion finely

Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium-high heat

Once hot, add the sliced onion with a small pinch of salt and sugar and cook for 6-7 min or until they have softened and caramelised

Once done, set aside and reserve the pan

Chop half your coriander finely, including the stalks and keep the remaining coriander leaves whole

Wash your lettuce, remove the outer leaves (2 per person!) and set aside

Chop the inner core into quarters, lengthways

Grate your cheddar cheese

Heat a large, wide-based pan (preferably non-stick and with a matching lid) with a drizzle of vegetable oil over a high heat

Once hot, add your wagyu burger patty[ies] and press down firmly with a spatula and cook for 5 min or until browned on one side

Once browned on one side, reduce the heat to medium-high, flip the patty[ies] and cook for a further 5 min or until nicely browned and cooked through (no pink meat!) – this is your wagyu patty

Return the reserved pan to a medium-high heat with a small knob of butter

Once melted, add your chipotle paste and the remaining ground paprika and cook for 1 min or until fragrant

Once fragrant, add your gravy base with 100ml [130ml] [170ml] boiled water and a pinch of sugar

Cook for 2 min or until thickened – this is your chipotle gravy

Add the diced onion and chopped coriander to a bowl with the juice of half your lime[s] and a pinch of salt

Give everything a good mix up – this is your coriander & onion salsa

Cut the remaining lime into 1 wedge per person

Once the chips are done, remove the tray[s] from the oven and push them into 1 pile per person, then top each pile with the grated cheese

Return the tray[s] to the oven for 2-3 min or until the cheese has melted

Slice your brioche bun[s] in half (if required!)

Add the brioche halves to a baking tray, cut side up, and put the tray in the oven for 4-5 min or until warmed through

To build your burger, spread the warmed brioche base with a dollop of mayo, then add the outer lettuce leaves, a wagyu patty followed by the caramelised onions, the reserved coriander leaves, a spoonful of the chipotle gravy and top with a warmed brioche lid, then serve the cheesy fries and lettuce quarters to the side, top the fries with the coriander & onion salsa and drizzle the lettuce with olive oil

Garnish with a lime wedge
