Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7 and boil a kettle

Peel and chop 3/4 of your red onion[s] into thin wedges and finely dice the remaining red onion

Peel and finely chop (or grate) your garlic

Heat a large, wide-based, hob-safe oven-proof casserole dish with a matching lid with a drizzle of vegetable oil over a medium-high heat

Once hot, add the onion wedges with a generous pinch of salt and cook for 4-5 min or until beginning to soften

Once slightly softened, add the half the chopped garlic (you'll use the rest later!) and cook for a further 1-2 min or until softened and fragrant

Once softened, add the ground cumin, ground smoked paprika and tomato paste with half the chilli flakes (can't handle the heat? Go easy!)

Cook for 1 min or until fragrant

Once fragrant, add the chopped tomatoes and 100ml [130ml] [170ml] boiled water with the beef stock mix and chipotle paste (not a fan of spice? Just add a little!)

Transfer your slow cooked beef brisket and any juices and your black beans (no need to drain!) with all the bean water into the dish

Bring to the boil over a high heat and once boiling, cover with the lid and put the dish in the oven for 30 min

When the chilli has 20 min left, heat a pot over a medium heat with a small knob of butter and once melted, add the remaining garlic and cook for 2 min or until fragrant

Once fragrant, add your white long grain rice and stir to coat the grains, then add 225ml [300ml] [450ml] cold water and bring to the boil over a high heat

Once boiling, reduce the heat to very low and cook, covered, for 12-15 min or until all the water has absorbed and the rice is cooked. Once done, remove from the heat and set aside (lid on) to steam until serving

Meanwhile, grate the cheddar cheese

Chop your coriander finely, including the stalks, leave a few leaves for garnish

Once ready, stir the chopped coriander through the cooked rice – this is your coriander rice

Remove the dish from the oven and using two forks pull apart the beef then give everything a good mix up – this is your ultimate beef brisket & black bean chilli

Serve the ultimate beef brisket & black bean chilli with the coriander rice to the side

Top with your natural yoghurt, grated cheese and reserved coriander leaves

Sprinkle over the diced red onion and remaining chilli flakes (can't handle the heat? Go easy!)
