Turkey Piccata With Potatoes & Garlicky Courgettes

Feast in a flash and pack in the protein too. You'll pan-fry turkey steaks in a lemony piccata sauce with salty capers and a splash of wine, then serve with buttery crushed potatoes and garlicky greens. It's a bright, fresh winner. High in protein. Protein contributes to a growth in muscle mass.

Boil half a kettle

Top, tail and slice your courgette[s] into discs on the diagonal, then chop your potatoes into bite-sized pieces

Roll your lemon[s] with your hand on a hard surface (to release more juice) and cut in half

Peel and finely chop your shallot[s], then peel and finely chop (or grate) your garlic

Add the chopped potatoes to a heatproof bowl, then cover the bowl with cling film and pierce a few holes in the top with a fork

Put the bowl in the microwave for 6-8 min or until the potatoes are fork-tender

Heat a large, wide-based pan (preferably non-stick) over a medium-high heat with a drizzle of vegetable oil

Once hot, add your turkey breast steak[s] and season with a generous pinch of salt and cook for 5-6 min on each side or until golden and cooked through (no pink meat!)

Tip: Cooking for 3 or more? Use 2 pans or cook in batches!

Heat a separate large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a high heat

Once hot, add the sliced courgette and cook for 4-5 min or until starting to char

Meanwhile, combine your Chinese rice wine and chicken stock mix with 100ml [130ml] [170ml] boiled water – this is your stock

Once the courgette is charred, add a knob of butter to the pan with the chopped garlic and cook for 1 min or until fragrant

Once fragrant, add your spinach to the pan with a generous pinch of salt and pepper and cook for 2 min or until the spinach is wilted – these are your garlicky courgettes

Once the turkey is cooked, transfer to a clean board and leave to rest, then return the pan to a medium-high heat

Once hot, add the chopped shallot and cook for 1-2 min or until softened

Once softened add 1 tsp [1 1/2 tsp] [2 tsp] flour and stir it all together, add the stock and cook for 1-2 min or until the sauce has thickened slightly, once reduced, add your capers to the pan with a knob of butter and a squeeze of lemon juice, then stir it all together – this is your piccata sauce

Once the potatoes are fork-tender, add a knob of butter and a generous pinch of salt and pepper to the bowl

Crush the seasoned potatoes lightly with a fork – these are your crushed potatoes

Tip: Just crush them gently, or they'll turn to mash!

Serve the turkey steaks with the garlicky courgettes and crushed potatoes to the side

Pour the piccata sauce all over
