The One With All The Cheese Pizza

Could this be any cheesier? Smother your heart-shaped bases with tomato sauce and a dreamy blend of mozzarella, Stilton, soft cheese and Italian hard cheese. Bake until bubbling and serve with salad and a kick of chilli relish.

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 240ºC/ 220ºC (fan)/ gas 9

Put a large baking paper-lined baking tray (or two!) in the oven to heat up (this will stop the pizza bottoms from going soggy!)

Add your dried yeast to a large bowl with 100ml [150ml] [200ml] warm water and 1 tsp [1 1/2 tsp] [2 tsp] sugar

Give it a good mix up and set aside for 5-10 min for the yeast to develop

Meanwhile, grate your Italian hard cheese

Drain your mozzarella, then pat and squeeze as much liquid out as you can with kitchen paper, then tear the drained mozzarella into rough, bite-sized pieces

Add your tomato paste to a bowl with half your balsamic vinegar (you'll use the rest later!), 1 tsp [1 1/2 tsp] [2 tsp] sugar and a pinch of salt and pepper

Add 3 tbsp [4 1/2 tbsp] [6 tbsp] cold water and stir it all together – this is your balsamic tomato sauce

Add your pizza base mix to the bowl with the yeast

Gradually add up to 75ml [115ml] [150ml] warm water (you may not need all of it), a little at a time, and gently mix with a plastic spatula until a sticky dough ball has formed

Tip the dough out onto a floured work surface and cut into 1 per person

Toss each dough ball in a light dusting of flour until coated, rounding the ball as you go (no need to knead!)

Press each dough ball in the centre and gently push outwards with your fingertips, leaving the rim of the pizza untouched to form a crust (don't worry if the dough rips, just stick it back together and carry on!)

Tip: Dust with extra sprinkles of flour as you go to stop it sticking!

Keep going until your base is approx. 18-20cm in diameter, then roughly mould into a heart shape (it doesn't need to be perfect!) – these are your heart-shaped pizza base[s]

Remove the baking tray[s] from the oven (careful the tray[s] will be hot!)

Transfer the heart-shaped pizza base[s] to the baking tray[s], then divide the balsamic tomato sauce evenly between each pizza and spread it evenly with the back of a spoon

Tip: To pick up the pizza dough, gently flip it over the back of your hand to stop it ripping!

Top the heart-shaped pizza base[s] with the grated Italian hard cheese and torn mozzarella

Crumble your stilton cheese on the top and spoon over your soft cheese

Tip: Cooking for 2 or more? Make sure the pizzas don't overlap on the tray to avoid raw dough!

Put the tray[s] in the oven for 15-18 min or until the cheese has melted and the crust has puffed up and browned – these are your four cheese heart-shaped pizza[s]

While the pizza is cooking, wash your salad, then pat dry with kitchen paper

Serve the four cheese heart-shaped pizza[s] with your salad and red chilli relish to the side

Drizzle a little olive oil and the remaining balsamic vinegar over the salad
