Sweet 'N' Sour Chicken With Edamame Rice

Ingredients for 2 people

5g toasted sesame seeds

250g British diced chicken breast

You'll also need

Olive oil, Salt (or dietary alternatives)

Cooking instructions

Instructions for 2 portion recipe.

Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium-high heat

Once hot, add the diced chicken breast with a pinch of salt and cook for 4-5 min until the chicken has started to brown

Once the chicken has started to brown, add the chopped pepper & pineapple (including any excess pineapple juice!) and the ginger & garlic paste and cook for 2-3 min further until fragrant

Meanwhile, add the edamame & jasmine rice to a large, heatproof bowl and put the bowl in the microwave for 2-3 min or until piping hot

Once fragrant, sprinkle in the cornflour and give everything a good mix up

Add the tomato ketchup, chilli jam, soy sauce and rice vinegar and cook for 2 min further until the sauce has thickened and the chicken is cooked through (no pink meat!) – this is your sweet 'n' sour chicken

Serve the sweet 'n' sour chicken over the heated edamame & jasmine rice

Sprinkle over the toasted sesame seeds
