Swedish-Style Creamy Salmon & Potato Pie

Serve up a slice of Sweden with this take on traditional "Laxpudding". You'll layer salmon with creamy potato slices before adding dill and spring onion for a refreshing kick. Serve up with a mustardy salad on the side to finish.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7 and boil half a kettle

Finely slice your potato[es] into discs

Add the sliced potatoes to a heatproof bowl, then cover the bowl with cling film and pierce a few holes in the top with a fork

Put the bowl in the microwave for 6-8 min or until the potatoes are fork-tender

Dissolve your vegetable stock mix with 100ml [130ml] [180ml] boiled water and a very generous pinch of salt

Add your clotted cream with 80ml [120ml] [160ml] milk and give everything a good mix up – this is your creamy stock

Grease the oven-proof dish with a drizzle of olive oil

Layer half of the softened potato discs on the bottom of the oven-proof dish

Top with your salmon flakes

Layer the remaining softened potato discs on top of the salmon flakes, reserve the bowl

Pour the creamy stock over the layered potatoes and top with a generous grind of pepper

Cook in the oven for 28-30 min or until golden and bubbling – this is your Swedish-style creamy salmon & potato pie

Meanwhile, chop your tomato[es] into wedges

Trim, then slice your spring onion[s]

Chop your dill finely, including the stalks

Wash your salad, then pat dry with kitchen paper

Wipe the reserved bowl clean

Add half your wholegrain mustard with a pinch of sugar and a drizzle of olive oil to the bowl and whisk together

Add your washed salad and tomato wedges to the bowl and toss – this is your mustardy salad

Serve the Swedish-style creamy salmon & potato pie and top with the chopped dill and sliced spring onion

Serve the mustardy salad to the side
