Stout Battered Basa Sarnie With Salt & Vinegar Chips
This posh sarnie's got it all. Golden, pan-fried basa in a stout batter, dill mayo, fresh cucumber and crunchy lettuce. Serve with salt and vinegar chips for proper chippy flavours that Dad'll love.

Flour, Olive oil, Pepper, Salt, Vegetable oil, Water (or dietary alternatives)

Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Chop your potatoes (skins on) into chips
Add the chips to a baking paper-lined baking tray with a drizzle of vegetable oil
Put the tray in the oven for 25-30 min or until crispy and golden

Mix your stout paste with 50ml [75ml] [100ml] cold water in a medium bowl until fully combined, then add your cornflour and 2 tbsp [3 tbsp] [4 tbsp] flour
Whisk until a smooth, thick batter remains – this is your stout batter

Chop your dill finely, including the stalks
Grind the chopped dill in a pestle & mortar with a pinch of salt to form a paste
Add your mayo and mix well – this is your dill mayo
Tip: If you don't have a pestle & mortar, chop the dill very finely and mix with the salt and mayo

Slice your cucumber finely
Wash your lettuce, remove the outer leaves (2 per person!) and set aside, then roughly tear the inner core
Add the torn lettuce core and half of the sliced cucumber (save the rest for later!) to a large bowl with half of your cider vinegar, a pinch of salt and pepper and a drizzle of olive oil
Gently toss it all together – this is your cucumber salad

Chop each fish fillet into 2 pieces
Season the chopped fish with a pinch of salt and sprinkle both sides with flour until fully coated, then tap off any excess – this is your floured fish

Heat a large, wide-based pan (preferably non-stick) with a generous drizzle of vegetable oil over a medium-high heat
Once the pan is hot, dip the floured fish into the batter and turn it several times until fully coated, then add the coated fish to the pan and cook for 4-5 min on each side or until cooked through, golden and crispy – this is your stout battered fish
Tip: Your fish is cooked once it turns opaque and flakes easily

Slice your ciabatta[s] in half
Once the chips are done, remove the tray from the oven, add your ciabatta halves, cut side up, and return the tray[s] to the oven for 2-3 min or until warmed through
Tip: You can pop them on top of the chips to save on washing up!

To build your sarnie, spread some of the dill mayo over the toasted ciabatta base, then add the remaining sliced cucumber, the reserved lettuce leaves and the stout battered fish
Spoon over the remaining dill mayo and top with a toasted ciabatta lid
Serve the cucumber salad and the chips to the side, drizzle the chips with the remaining cider vinegar and a pinch of salt and enjoy!
