Sticky Spicy Pineapple Chicken With Garlic Rice & Corn Salad

Sweet, sticky, and spicy: this pineapple chicken does it all. Toss tender breast in a fiery sauce and serve with garlic rice. Char corn and peppers, mix with shallot and feta and you've got a street food-style salad on the side.

You'll also need

Olive oil, Pepper, Salt, Vegetable oil, Water (or dietary alternatives)

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Take your chicken out of the fridge, open the packet and let it air

Peel and finely chop (or grate) your garlic

Deseed your sweet pointed pepper[s] (scrape the seeds and pith out with a teaspoon) and chop roughly chop

Peel and finely dice your shallot[s]

Drain your sweetcorn

Heat a pot with a lid over a medium heat with a drizzle of vegetable oil

Once hot, add the chopped garlic and cook for 1 min or until fragrant

Once fragrant, add your white long grain rice and chicken stock mix to the pot with 225ml [300ml] [450ml] cold water and bring to the boil over a high heat

Once boiling, reduce the heat to very low and cook, covered, for 12-15 min or until all the water has absorbed and the rice is cooked

Once done, remove from the heat and set aside (lid on) to steam until serving – this is your garlic rice

Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a high heat

Once hot, add the drained sweetcorn and chopped pepper and cook for 4-5 min or until charred

Once charred, transfer to a bowl, reserve the pan

Add your chicken to a clean chopping board, cover with cling film and bash with a rolling pin until flattened to approx. 1cm thickness

Return the reserved pan to a medium-high heat with a drizzle of vegetable oil

Once hot, add the flattened chicken with a generous pinch of salt and pepper and cook for 5 min on each side or until golden and cooked through (no pink meat!)

(Doubled your proteins? Use 2 pans!)

Tip: Cooking for 3? You may need to do this in batches!

Meanwhile, combine the charred corn, pepper and diced shallot in a bowl and crumble your feta over the top

Season with a generous pinch of salt and pepper and a drizzle of olive oil and toss – this is your charred street corn salad

Once the chicken is cooked, add your pineapple & birds eye chilli sauce (can't handle the heat? Go easy!) to pan with a splash of cold water and cook for 1 min further or until the sauce is sticky and coats the chicken – this is your sticky spicy pineapple chicken

Serve the sticky spicy pineapple chicken with the garlic rice and charred street corn salad to the side

Spoon any remaining sauce over the top of the chicken (not a fan of spice? Just add a little!)
