Squash & Wheat Berry Salad
Wheatberries are a high fibre, wholegrain. They retain their shape really well and have a nutty flavour, so they're perfect in salads. This roasted butternut squash, red onion, feta and rocket salad is the perfect example of a salad with real bite, topped with mixed seeds.

Instructions for 2 portion recipe.
Preheat the oven to 200°C/ 180°C (fan)/ 400°F/ Gas 6
Boil a kettle
Add the butternut squash to a baking tray (use tin foil to avoid mess!), drizzle with olive oil and season with both salt and pepper and give it a good mix
Place the tray in the oven and cook for 20-30 min or until the squash is tender and lightly browned
Meanwhile, add the wheat berries to a pot with plenty of boiled water and a pinch of salt (the same as you would for pasta)
Bring back to the boil, then cook over a high heat for 12-15 min or until they're tender with a slight bite
Once cooked, drain and return to the pot and leave to cool
Meanwhile, peel the red onion[s] and cut into wedges
Once the squash has been in the oven for 15 min, add the onion and dried sage to the tray, then return it to the oven for the remaining cooking time

Meanwhile, peel and finely chop (or grate) the garlic
Juice the lemon[s]
Mix the chopped garlic and lemon juice with 2 tbsp [4 tbsp] olive oil and season with salt and pepper - this is your lemon dressing
Wash and dry the rocket salad
Scatter the 3 seed mix all over the squash and onion 5 mins before they're done

Crumble the feta
Wash and dry the rocket salad

Once the squash and onions are done, add the and cooked wheat berries to the baking tray and give the lot a good mix
Gently tumble the rocket leaves and lemon dressing through

Serve and enjoy!
