Spring Sausage Toad In The Hole W. Sweet Potato Mash, Gravy & Dessert

Get in the mood for spring with this golden toad in the hole. You'll brown sausages before pouring in your batter and baking in the oven. Serve with fluffy sweet potato mash, gravy and peas with a Jaffa cake cheesecake on the side.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Combine 2 tbsp [3 tbsp] [4 tbsp] flour with your cornflour and egg[s] in a jug, mixing until there are no lumps remaining

Gradually whisk in 50ml [75ml] [100ml] milk with a pinch of salt and pepper, stirring until completely smooth and combined – this is your Yorkshire batter

Put the batter in the fridge to rest

Chop your sausages in half

Fill 2 holes of a muffin tray per person with a small drizzle of vegetable oil and put 2 sausage halves upright into each hole

Put in the oven and cook for an initial 12-15 min or until the sausages are lightly browned

Ti: Don't have a muffin tray? Use a small metal baking dish!

Meanwhile, boil a kettle

Peel your potato[es] and chop them into bite-sized pieces

Add the chopped potatoes to a pot with a matching lid with plenty of boiled water and bring to the boil over a high heat

Once boiling, reduce the heat to medium and cook for 12-15 min or until fork-tender

After the sausages have had an initial 12-15 min, remove the tray from the oven and quickly pour the rested Yorkshire batter into the muffin tin holes around the sausages

Tip: You need to be quick so the oil in the tin is hot enough to make the batter sizzle, this helps the Yorkies to rise!

Return the tray to the oven and cook for 18-20 min, or until the batter is golden and risen and the sausages are cooked through (no pink meat!) – this is your spring sausage toad in the hole

Tip: Don't peek! Opening the oven might make your Yorkies collapse!

Reboil the kettle

Once the potatoes are cooked, drain and return to the pot to steam dry

Return the potatoes to a low heat with a knob of butter and a generous splash of milk

Season with a grind of black pepper and a generous pinch of salt and mash until smooth, then cover to keep warm

Combine your gravy base with 100ml [150ml] [200ml] boiled water in a heatproof bowl or jug, whisk thoroughly

Put the gravy mix in the microwave and cook for 1 min or until thickened then give everything a good mix up (careful it may be hot!) – this is your gravy

Add your blanched peas to a colander and pour boiled water over them to refresh them

Serve the spring sausage toad in the hole with the mash and peas to the side

Pour the gravy over the top
