Spicy Meat-Free Chick'n & Gochujang Scissor Cut Noodles
For the perfect Lunar New Year celebration, this one's a cut above the rest. You'll snip fresh dough into chewy, noodle pieces then toss with meat-free chick'n, pak choi and a gochujang-agave sauce. Sweet, spicy and oh-so special.

Flour, Vegetable oil, Water (or dietary alternatives)

Instructions for 2 [for 3] [for 4] portion recipe.
Add your pizza base mix to a large bowl
Gradually add up to 150ml [225ml] [300ml] warm water (you may not need all of it), a little at a time, and gently mix with a plastic spatula until a sticky dough ball has formed
Tip the dough ball out onto a lightly floured work surface and knead it for 5 min or until a smooth dough forms, then cover the dough all over with a drizzle of vegetable oil and cover with cling film and set aside for 5 min to rest

Boil a kettle
Wash then cut your pak choi in half, separating the white base[s] and green tops, then pat it dry with kitchen paper
Cut the white base[s] into bite-sized pieces
Shred the green tops

Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-high heat
Once hot, add your meat-free chick'n and cook for 5 min or until warmed through and starting to brown

Fill a large pot with plenty of boiled water
Hold the dough with one hand and a pair of scissors with the other, cut small strips of noodles off the dough and allow them to fall into the water (be careful not to splash!), once done cutting the noodles, put the pot over a high heat and cook for 4 min or until cooked with a slight bite - these are your scissor cut noodles
Once cooked, drain the noodles, reserving a cup of starchy noodle water

Once the meat-free chick'n has started to brown, add the pak choi white bases to the pan and cook for 2-3 min or until softened
Once softened, add the pak choi green tops and give everything a good mix up until they're wilted

Add your agave, gochujang paste (can't handle the heat? Go easy!), ginger & garlic paste, soy sauce and toasted sesame oil to the pan with the meat-free chick'n
Give everything a good mix up and cook for 1 min or until fragrant

Once fragrant, add the cooked scissor cut noodles to the pan with a splash of reserved starchy noodle water
Give everything a good mix up until fully coated – this is your spicy meat-free chick'n & gochujang scissor cut noodles

Serve the spicy meat-free chick'n & gochujang scissor cut noodles
Garnish with your toasted sesame seeds
