Spiced Mackerel & Green Bean Noodles

These lightly spiced noodles combine fresh summer flavours with a curry kick. You'll top them with mackerel, seasonal green beans and a drizzle of tangy mango chutney to serve.

Instructions for 2 portion recipe.

Boil a kettle

Peel and finely dice brown onion[s]

Peel and finely slice (don't chop!) the garlic

Step 1

Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium high heat

Once hot, add the diced onion and sliced garlic with a pinch of salt and cook for 3-4 min or until the onion has softened and begun to caramelise

Whilst the onion is softening, chop the green beans in half

Trim, then slice the spring onion[s] finely

Strip the mint leaves from their stems and chop them roughly, discard the stems

Add the medium egg noodles to a pot and cover them with boiled water until fully submerged

Bring to the boil over a high heat and cook for 5-6 min or until cooked with a slight bite

Once done, drain and set aside

Add a large knob of butter, the black mustard seeds and green beans to the pan and cook for 2-3 min or until the beans begin to soften

Meanwhile, slice the red chilli finely into rounds

Once the beans have slightly softened, add the garam masala, ground cumin and turmeric and give everything a good mix up

Remove the skin from the smoked mackerel fillets

Tear the mackerel into the pan in rough bite-sized pieces and stir it all together

Add the drained noodles and mint to the pan and mix everything together – these are your spiced mackerel & green bean noodles

Serve the spiced mackerel & green bean noodles in bowls

Top the noodles with a dollop of mango chutney and garnish with the sliced spring onion, chilli rounds (can't handle the heat? Go easy!) and nigella seeds
