Spanish-Style Pork & Beef Burger With Potatoes And Garlic Aioli
Try your own 'hamburguesa' with this Spanish-style stack. You'll load cheesy pork and beef patties into brioche buns with creamy garlic aioli, roasted pepper and onion. Plate up with smoky potatoes and dig in.

Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Chop your potatoes (skins on) into bite-sized pieces
Add the chopped potatoes to a baking tray with half your ground smoked paprika, a drizzle of vegetable oil and a pinch of salt and pepper
Give everything a good mix up and put the tray in the oven for an initial 10 min – these are your smoky potatoes

Slice your sweet pointed pepper[s] into rings (discard the seeds and pith)
Peel and chop your red onion[s] into wedges
Peel and finely chop (or grate) your garlic

Once the potatoes have had an initial 10 min, remove the tray from the oven and move the smoky potatoes to one side of the baking tray
Add the pepper rings and red onion wedges to the other side of the tray with a with a drizzle of vegetable oil and a pinch of salt and pepper
Tip: Cooking for 3 or more? Use a separate tray!
Return the tray[s] to the oven for a further 15 min or until everything is golden and crisp

Combine your mince, half the chopped garlic and remaining ground smoked paprika in a bowl with a generous pinch of salt and pepper
Give everything a good mix up until thoroughly combined (clean hands are the best way!)
Divide and shape into equal-sized patties (1 per person!) – this is your burger patty[ies]

Grate your cheddar cheese
Combine your mayo with the remaining chopped garlic and a pinch of salt and pepper – this is your garlic aioli
Wash your salad, then pat dry with kitchen paper

Heat a large, wide-based pan (preferably non-stick, with a matching lid) over a medium heat
Slice your brioche bun[s] in half (if required!)
Once hot, add your brioche halves, cut-side down, and cook for 2-3 min or until toasted and charred
Set aside until serving, reserving the pan

Return the reserved pan to a high heat
Once hot, add the burger patty[ies], press down firmly with a spatula and cook for 5 min
Tip: Cooking for 5? You may need to do this in batches!
Flip the patty[ies] and reduce the heat to medium-high
Top with the grated cheese and cook, covered, for 5 min further until cooked through and charred (no pink meat!) – this is your cheesy burger patty[ies]

To build your burger, add a handful of salad to the toasted brioche base and top with some of the roasted pepper & onion, a cheesy burger patty, a spoonful of garlic aioli and the toasted brioche lid – this is your Spanish-style burger
Serve the Spanish-style burger with the smoky potatoes, remaining salad, roasted pepper & onion and garlic aioli to the side
