Southern-Style Chicken Breast, Sweet Potato Mash & Beans
This Southern-fried chicken breast packs a protein hit in a smaller size. Serve your spiced chicken with sweet potato mash, green beans and gravy to finish. Smaller portion providing 2 of your 5-a-day, a source of fibre and high in protein.

Before you start cooking, take your chicken out of the fridge, open the packet and let it air, then boil a kettle
Chop your sweet potato[es] (skins on) into bite-sized pieces

Trim your green beans

Add the chopped potatoes and sweet potatoes to a pot with a lid with plenty of boiled water and bring to the boil over a high heat
Once boiling, reduce the heat to medium-high and cook for an initial 6-8 min
Reboil half a kettle

Meanwhile, add your chicken to a clean chopping board
Cover with cling film and bash with a rolling pin until flattened to approx. 1cm thickness
Add your southern fried seasoning and ground smoked paprika to a plate with a generous pinch of salt
Press the flattened chicken onto the plate to evenly coat all over – this is your coated chicken

Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium-high heat
Once hot, add the coated chicken to the pan and cook for 5-6 min on each side or until browned and cooked through (no pink meat!) – this is your southern-style chicken
Tip: Cooking for 5? Use two pans!

After the potatoes have had an initial 6-8 min, add the trimmed beans to a sieve and set it over the pot
Cover with a lid and cook for a final 7-8 min, or until the green beans are tender with a bite and the potatoes are fork-tender

Whilst the potatoes and beans are cooking, chop your chives finely
Combine your gravy base with 100ml [150ml] [200ml] boiled water and whisk thoroughly until completely combined – this is your gravy mix
When everything is almost ready, put the gravy mix in the microwave for 1 min on high or until thickened and stir it all together – this is your gravy

Once the potatoes are fork tender, set aside the green beans and drain the potatoes
Return the drained potatoes to the pot with a splash of milk, a small knob of butter and a generous pinch of salt and pepper
Mash the potatoes roughly, then stir through the chopped chives – this is your chive sweet potato mash

Serve the southern-style chicken over the chive sweet potato mash with the green beans to the side
Pour the gravy all over
