Smoky Chipotle Pulled Shiitake Mushrooms With Corn Salsa & Rice
Get ready to bring that al fresco feeling home. You'll fry smoky, chipotle-glazed pulled mushrooms until crispy before serving over rice. Finish with a zesty corn salsa for a slice of street-style heaven.

Before you begin...
Get all your ingredients and equipment ready
Skim through these steps, then wash your fruit and veg
Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 min)

Now, let's get started!
Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium-high heat
Bash your pulled shiitake mushrooms with a rolling pin to break them up
Add the smashed pulled shiitake mushrooms to the pan and cook for 2 min or until starting to char

While the mushrooms are cooking, peel and finely slice your shallot[s]
Peel and finely chop (or grate) your garlic

Once the mushrooms are charred, add the sliced shallot and your smoked paprika to the pan and cook for 3 min or until the shallot is starting to soften

Meanwhile, drain your sweetcorn, saving the sweetcorn juice
Dice your tomato[es] finely, then slice your spring onion[s] finely
Zest half your lime[s], then cut in half (try to grate lightly with a micro-plane or sharp box grater and avoid grating the white pith, as this is very bitter)
Combine the drained sweetcorn, chopped tomato, half the sliced spring onion (save the rest for garnish!) with the lime zest and a squeeze of lime juice
Season with a pinch of salt, pepper and a drizzle of olive oil – this is your zesty corn salsa

Squeeze your pouch[es] of cooked long grain rice to separate the grains
Tear the top corner of the pouch[es] (just a little!) and microwave for 2 min or until piping hot
Tip: If you're cooking two or more pouches, pop them in together but increase the microwave cook time accordingly

Once the shallot has softened, add your tomato paste and chopped garlic to the pan and cook for 1 min or until fragrant
Once fragrant, remove the pan from the heat and add your chipotle paste (can't handle the heat? Go easy!), soy sauce and reserved sweetcorn juice to the pan
Season with a pinch of salt and stir it all together – this is your smoky chipotle fable mushrooms

Cut the remaining lime into wedges (1 per person!)
Serve the smoky chipotle fable mushrooms with the cooked rice and zesty corn salsa to the side
Garnish with the remaining sliced spring onion and a lime wedge
