Smoky Cheddar "Mummy" Sausage Rolls With Garlicky Wedges & Salad
Dust off the cobwebs for a spooky sharing board. You'll bake crispy cheddar sausage rolls disguised as mummies, before pairing them with potato wedges drenched in garlicky mayo and ketchup. Finished with a fresh gem salad, it's scary good.

Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Cut your potatoes (skins on) into wedges
Add the wedges to a baking tray with a drizzle of vegetable oil
Season with a pinch of salt and pepper and give everything a good mix up
Put the tray in the oven for 25-30 min or until the wedges are golden and crisp

Peel and finely chop (or grate) your garlic
Cut your cheddar cheese into small cubes
Combine your sausage meat (remove the paper if required!) with the diced cheddar, your ground smoked paprika, smoked sea salt flakes and most of the chopped garlic (you'll use the rest later!) – this is your sausage mixture

Dust your work surface with a generous sprinkling of flour, unwrap your puff pastry and roll it out into a large rectangle, approx. 0.5cm thickness with a rolling pin, then cut into 2 rectangles per person
Add the pastry rectangle[s] to a baking paper-lined baking tray (or two!)
Add the sausage mixture to the middle of each pastry rectangle and press into a sausage shape, then make multiple small cuts down each side of the sausage mixture

Fold the pastry strips over the sausage mixture leaving a gap for the eyes – these are your "mummy" sausage roll[s]

Transfer the "mummy" sausage rolls to a baking paper-lined baking tray, fold side down
Put the tray[s] in the oven for 25 min or until the sausage rolls are cooked through (no pink meat!) and the pastry is golden and puffed up – these are your smoky cheddar "mummy" sausage rolls

Combine the remaining chopped garlic and half your white wine vinegar (you'll use the rest later!) with most of your mayo in a small bowl (leave enough in the sachet for decoration!) and season with a small pinch of salt – this is your garlic mayo drizzle

Wash your lettuce, then pat it dry with kitchen paper and cut into wedges
Combine the remaining white wine vinegar in a medium bowl with a pinch of sugar and a little drizzle of olive oil
Add the lettuce wedges to the bowl and toss

Add two small dots of mayo to the pastry gaps in the smoky cheddar "mummy" sausage rolls
Cut a small hole in the corner of your tomato ketchup sachet and add two smaller dots of ketchup to the centre of the mayo dots – these are the "mummy's" eyes
Top the wedges with the garlic mayo drizzle and some ketchup – these are your garlicky wedges
Serve the dressed wedges and any remaining ketchup to the side
