Before you begin...

This recipe takes around 5-10 min to prep, so get your slow cooker and all your ingredients ready, then wash your fruit and veg

Turn on your slow cooker to high

Take your chicken out of the fridge, open the packet and let it air

Now, let's get started!

Boil a kettle

Peel and cut your brown onion[s] into quarters, then separate the wedges so you end up with a pile of onion petals

Peel and finely chop (or grate) your garlic

Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a high heat

Once hot, add your diced chicken and the onion petals to the pan and cook for 5-6 min, turning halfway, or until golden

Once golden, add the chopped garlic and cook for 1-2 min or until fragrant

Add the contents of your pan to the slow cooker with 1 tbsp [1 1/2 tbsp] [2 tbsp] flour and give everything a good mix up until everything is coated in the flour

Add 150ml [195ml] [255ml] boiled water, your chicken stock mix, soy sauce, half your dried thyme (save the remaining dried thyme for another recipe!) and a generous pinch of pepper

Gently stir it all together, cover and cook on high for 3 hours or until the chicken is cooked through (no pink meat!) – this is your chicken stew

Use this time to clear up, set the table, have a cup of tea or simply chill!

Once the chicken stew has been cooking 3 hours, boil a kettle

Peel your potatoes and chop them into large, bite-sized pieces

Add the chopped potatoes to a pot with plenty of boiled water

Bring to the boil over a high heat, then reduce the heat to medium and cook for 12-15 min or until fork-tender

Once done, drain and return to the pot to steam dry

Reboil half a kettle and return the potatoes to a low heat with a small knob of butter and a splash of milk, then season with a small pinch of salt and mash until smooth

Wash your spinach then add to a colander with your blanched peas and pour boiled water all over or until the spinach has wilted and the peas are warmed through

Stir your soft cheese and Chinese rice wine through the chicken stew until combined – this is your slow cooker creamy chicken stew

Serve the slow cooker creamy chicken stew with the mash and greens to the side

Top the greens with a small knob of butter

Season everything with a pinch of salt and pepper
