Butter, Olive oil, Pepper, Salt, Sugar, Vegetable oil, Water (or dietary alternatives)

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Cut your potatoes (skins on) into fries

Add the fries to one side of a baking paper-lined baking tray with a drizzle of vegetable oil and a pinch of salt and pepper

Add your hot dog sausage[s] to the other side of the tray

Give everything a good mix up and put the tray in the oven for 25 min or until the fries and sausages are cooked through (no pink meat!)

Meanwhile, peel and finely slice your brown onion[s]

Boil half a kettle

Heat a large, wide-based pan (preferably non-stick) with a knob of butter over a medium-high heat

Once hot, add the sliced onion with a splash of cold water and a pinch of salt and sugar

Cook for 18-20 min or until softened and caramelised – this is your caramelised onion

Tip: The water will help the onion soften quicker!

While the onion is cooking, slice your green chilli[es] finely

Add the sliced chilli to a small heatproof bowl with your white wine vinegar, 1 tbsp [1 1/2 tbsp] [2 tbsp] boiled water, a small pinch of salt and a pinch of sugar

Give everything a good mix up and microwave for 1 min or until slightly softened – this is your quick-pickled chilli

Tip: Don't have a microwave? Heat in a small pot for 1-2 min!

Wash your salad, then pat dry with kitchen paper

Cut a slit into the top of your hot dog bun[s]

Once the fries are nearly done, add the cut hot dog bun[s] to a separate baking tray, cut side up, and put the tray in the oven for 2-3 min or until warmed through

To build, spread your soft cheese into the warmed hot dog bun and then add the hot dog sausage, top with the caramelised onion and the quick-pickled chilli (reserve the pickling liquid!)

Drizzle over your hot pepper sauce (can't handle the heat? Go easy!) – this is your Seattle-style hot dog

Serve the salad with a drizzle of olive oil and the reserved pickling liquid, with the fries to the side
