Sausage Tray Bake With Potatoes & Marmite Gravy & Broccoli
Love it or hate it, Marmite is the star of the show here. You'll roast sausages with carrot, leek and potatoes before smothering the lot with a rich Marmite and onion gravy to finish.

Butter, Pepper, Salt, Sugar, Vegetable oil, Water (or dietary alternatives)

Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Chop your potatoes (skins on) into bite-sized pieces
Add the chopped potatoes to a large heat-proof bowl covered with cling film and pierce a few holes in the top with a fork, then put the bowl in the microwave for 6-8 min or until slightly tender

Meanwhile, boil half a kettle
Top, tail, peel and slice your carrot[s] into discs on the diagonal
Chop your leek[s] in half lengthways, wash thoroughly to remove any grit then top, tail and chop into bite sized pieces

Add the softened potatoes to a baking tray (or two!) with a large piece of tin foil (reserve the bowl!)
Drizzle over a large splash of boiled water and scrunch the foil around the potatoes to form a tightly sealed parcel (or two!)
Put the tray[s] in the oven for an initial 10 min

Cut your brown onion[s] into wedges, leaving the skins and roots on
Tip: This stops them drying out and falling apart when roasting!

Once the potatoes have had an initial 10 min, remove the tray[s] from the oven and add the chopped leek, chopped carrot and onion wedges to the other side of the tray
Add a drizzle of vegetable oil and a pinch of salt and pepper
Add your pork and leek sausages on top of the veg
Put the tray[s] in the oven for 20-25 min or until the sausages are cooked through (no pink meat!) and the potatoes are tender

Once the potatoes are tender, remove the tray[s] from the oven and transfer the cooked potato to the reserved heatproof bowl with a small knob of butter and a pinch of salt and pepper, then crush lightly with a fork – these are your buttery crushed potatoes

Carefully cut off the root and remove the skins from the onion
Combine your gravy base, Marmite and roasted onion with 125ml [200ml] [250ml] boiled water and a pinch of sugar in a heat-proof bowl and whisk thoroughly
Put the bowl in the microwave and cook for 1 min or until thickened
Give everything a good mix up (careful it may be hot!) – this is your Marmite & onion gravy

Serve the pork and leek sausages with the buttery crushed potatoes and roasted carrot & leek to the side
Drizzle over the Marmite & onion gravy
