Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Boil a kettle

Add your sausages to a baking tray (or two!) and put the tray[s] in the oven for 20-25 min or until the sausages are cooked through (no pink meat!)

While your sausages are cooking, chop your potato[es] (skins on) into large, bite-sized pieces

Add the chopped potatoes to a pot with plenty of boiled water and bring to the boil over a high heat

Once boiling, reduce the heat to medium and cook for 12-15 min or until fork-tender

Once done, drain and return to the pot to steam dry

Whilst everything is cooking, combine your gravy base with 125ml [200ml] [250ml] boiled water and whisk thoroughly – this is your gravy

Trim your green beans, then add them to a large piece of tin foil with your sweet pea pods and a splash of cold water and a pinch of salt, scrunch the foil around the green beans and sweet pea pods to form a tightly sealed parcel and add to a baking tray – these are your mixed greens

Tip: Cooking for 3 or more? Make 2 separate parcels!

Put the tray in the oven for 12-14 min or until the veg is tender with a slight bite

Meanwhile, peel and finely slice your red onion[s]

Peel and finely chop (or grate) your garlic

Heat a large, wide-based pan (preferably non-stick) with a small drizzle of vegetable oil over a very low heat

Once hot, add the sliced onion with a pinch of salt and cook for 7-8 min or until softened and caramelised

Once the onion has caramelised, add the gravy and chopped garlic to the pan and cook for 2-3 min, stirring regularly, or until thickened – this is your onion gravy

Return the cooked potatoes to a low heat with a small knob of butter, your roasted garlic paste (not a big garlic fan? Try using less!) and a splash of milk

Season with a pinch of salt and mash until smooth – this is your garlic mash

Serve the cooked sausages over the garlic mash with the mixed greens to the side

Pour the onion gravy over the sausage & mash
