Salsa Macha Steak With Loaded Black Bean & Sweet Potato Mash

Big on flavour and rich in goodness, this steak dinner hits all the right notes. Serve with sweet potato mash, loaded with black beans, coriander and spring onion then drizzle over homemade salsa macha and dig in.

Cooking instructions

Before you start cooking, take your steak out of the fridge, open the packet and let it adjust to room temperature

Boil a kettle, then peel and chop your potato[es] into bite-sized pieces

Add the chopped potato to a pot of boiled water over a high heat and bring to the boil

Cook for 10-15 min or until fork-tender

Once done, drain, return them to the pot and cover to keep warm

Add a small knob of butter and a generous pinch of salt to the warmed potatoes and mash them until smooth

Tip: If the mash has cooled down, warm it through over a low heat, stirring constantly

Meanwhile, bash your pumpkin seeds in their bag with a rolling pin

Heat a large, dry wide-based pan over a medium heat

Once hot, add the bashed pumpkin seeds and black sesame seeds with a pinch of salt and cook for 2-3 min or until toasted and lightly golden

Tip: Watch them like a hawk to make sure they don't burn!

Cut your lime[s] in half

Combine the toasted pumpkin seeds, toasted black sesame seeds, soy sauce and chipotle paste (can't handle the heat? Go easy!) in a small bowl

Add a squeeze of lime juice, a generous pinch of salt, 1 tbsp [1 1/2 tbsp] [2 tbsp] olive oil and a pinch of sugar

Give everything a good mix up – this is your DIY salsa macha

Trim, then chop your spring onion[s] finely

Chop your coriander finely, including the stalks

Drain and rinse your black beans

Heat the reserved pan over a high heat

Pat your steak[s] dry with kitchen paper, then drizzle them with a little vegetable oil and season with a pinch of salt on both sides

Once very hot, add the steak[s] to the pan

For rare, cook for 2-3 min max on each side; for medium-rare, cook for 3-4 min on each side; for medium, cook for 4-5 min on each side

Once the steaks are cooked, transfer to a plate to rest

While the steaks are resting, return the reserved pan to a medium-high heat with a drizzle of olive oil

Once hot, add the drained black beans with a pinch of salt and pepper and cook for 2-3 min or until your beans are warmed through

Slice the rested steak finely on a clean board

Cut the remaining lime into wedges

Serve the potato mash topped with the sliced spring onion, toasted black beans and chopped coriander

Serve the sliced steak to the side with the DIY salsa macha drizzled over the top

Garnish with a lime wedge
