Salmon With Creamy Tenderstem & Lemon Gnocchi
Time for some elegance. You'll pan-fry gnocchi until golden before tossing it in a silky lemon sauce with Tenderstem broccoli. Top with flaky salmon for a real treat. Delicious.

Before you begin...
Get all your ingredients and equipment ready
Skim through these steps, then wash your fruit and veg
Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 min)

Now, let's get started!
Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium-high heat
Once hot add your salmon fillet[s], skin-side down, season with a little salt and cook for 9-10 min, turning once halfway, or until cooked through
Tip: Your fish is cooked when it turns opaque and flakes easily

Boil a little water in a kettle
Heat a separate large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium-high heat
Once hot, add your gnocchi and cook for 2-3 min or until starting to brown
Tip: Don't stir too often as this will prevent the gnocchi from crisping!

While the gnocchi cooks, zest half your lemon[s] (try to grate lightly with a micro-plane or sharp box grater and avoid grating the white pith, as this is very bitter), then cut into 1 wedge per person
Chop your Tenderstem broccoli into small bite sized pieces
Peel and slice your shallot[s]
Peel and finely chop (or grate) your garlic
Wash your salad, then pat it dry with kitchen paper

Once the gnocchi has browned slightly, add a knob of butter to the pan
Once melted, add the sliced shallot and chopped Tenderstem broccoli and cook for 4-5 min or until the Tenderstem starts to soften
Once softened, add the chopped garlic and cook for 1 min or until fragrant

Once fragrant, add your vegetable stock mix, Chinese rice wine and soft cheese to the pan with a splash of boiled water
Stir it all together and cook for 1 min or until creamy

Add the lemon zest and half your grated Italian hard cheese (save the rest for garnish!) to the pan
Season with a generous pinch of salt and pepper and a squeeze of lemon juice and give everything a good mix up – this is your creamy Tenderstem & lemon gnocchi
Tip: Add a splash of boiled water if your sauce is looking a little dry!

Serve the cooked salmon over the creamy Tenderstem & lemon gnocchi
Serve the salad to the side and dress with a drizzle of olive oil and a squeeze of lemon juice
Top with the remaining grated Italian hard cheese and a grind of pepper
Garnish with a lemon wedge
