Red Wine Ratatouille With Herbs De Provence & Crusty Baguette
Here's a French classic that's perfect for autumn. You'll lightly char your aubergine, courgette and red pepper before simmering in a jammy red wine stock and herbs de Provence. Top with cheese and basil, then grab a crusty buttered baguette to mop up every drop. Delicious.

Instructions for 2 [for 3] [for 4] portion recipe.
Preheat the oven to 220°C/ 200°C (fan)/ gas 7
Trim the green stalk off your aubergine[s] and discard
Slice the trimmed aubergine into thick slices, then chop into bite-sized pieces
Top, tail and chop your courgette[s] into quarters lengthways, then chop into small bite-sized pieces

Heat a large, wide-based hob-safe oven-proof casserole dish with a matching lid with a generous drizzle of olive oil over a high heat
Note: Make sure your dish is oven-proof and safe to use on the hob. Don't have one? Start cooking in a large, wide-based pan then transfer to an oven-proof dish and cover tightly with tin foil
Once hot, add the chopped aubergine and courgette with a pinch of salt and cook for 8-10 min or until golden and slightly charred
Tip: Looking a little dry? Add a little more oil!

While the veg is cooking, boil a kettle
Peel and finely dice your brown onion[s]
Peel and finely chop (or grate) your garlic
Deseed your pepper[s] (scrape the seeds and pith out with a teaspoon) and dice into bite-sized pieces

Once the veg is golden and slightly charred, reduce the heat to low, then add the diced onion, chopped garlic and diced pepper with 1 tsp [1 1/2 tsp] [2 tsp] flour
Add your tomato paste, herbs de Provence, red wine paste, vegetable stock mix and chopped tomatoes and give everything a good mix up
Add 300ml [400ml] [500ml] boiled water and 1 tsp [1 1/2 tsp] [2 tsp] sugar and bring to the boil over a high heat, then once boiling, cover with a lid and put the dish in the oven for 35-40 min or until the veg is tender and the sauce has thickened

Meanwhile, chop half your basil finely, including the stalks and keep the remaining basil leaves whole

Once the veg is tender and the sauce has thickened, remove the dish from the oven and add the chopped basil with a small pinch of salt and pepper
Set aside with the lid on for 4-5 min for the flavours to develop – this is your red wine ratatouille with herbs de Provence

Add your baguette[s] to a baking tray and put the tray in the oven for 3-4 min or until warmed through and crusty

Serve the red wine ratatouille with herbs de Provence and top with your grated Italian hard cheese and remaining basil leaves
Serve the crusty baguette to the side with a generous knob of butter
