You'll also need

Butter, Flour, Milk, Olive oil, Pepper, Salt, Sugar, Water (or dietary alternatives)

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7 and boil a kettle

Peel and finely dice your brown onion[s]

Peel and finely chop (or grate) your garlic

Heat a large, hob-safe oven-proof casserole dish with a matching lid with a drizzle of olive oil over a medium-high heat

Once hot, add the diced onion and chopped garlic and cook for 5-6 min or until softened

Once softened, add 1/2 tbsp [1 tbsp] [1 1/2 tbsp] flour and cook for 30 secs

Once softened, add your chopped tomatoes with 200ml [260ml] [340ml] boiled water, your red wine paste, beef stock mix and bone marrow paste

Season with a generous grind of black pepper and 1/2 tsp [1 tsp] [1 1/2 tsp] sugar and give everything a good mix up

Reboil a kettle

Add your slow cooked beef short rib[s] and bay leaf[ves] to the dish, then bring to the boil over a high heat and once boiling, cover with a lid, then put the dish in the oven for an initial 30 min

Add your Tenderstem broccoli and thyme to a large piece of tin foil (or two!) with a large splash of cold water and a small knob of butter

Scrunch the foil around the Tenderstem broccoli to form a tightly sealed parcel and add to a baking tray, then set aside until later

After the short rib has had an initial 30 min, remove it from the oven and spoon over some of the sauce

Return the dish to the oven, lid off, with the broccoli parcel for 10-15 min or until the broccoli and beef are both tender – this is your red wine & bone marrow braised beef short rib and thyme Tenderstem broccoli

While everything's in the oven, peel your potatoes and chop them into large, bite-sized pieces

Add the chopped potatoes to a pot with plenty of boiled water and bring to the boil over a high heat

Once boiling, reduce the heat to medium and cook for 12-15 min or until fork-tender

Once done, drain and return to the pot to steam dry

Return the potatoes to a low heat with your clotted cream and a splash of milk

Season with a generous pinch of salt and mash until smooth – this is your pomme purée

Serve the red wine & bone marrow braised beef short rib over the pomme purée with the thyme Tenderstem broccoli (discard the thyme stalks) to the side

Add a small knob of butter to the sauce in the dish and mix it all together, then spoon the sauce all over the short rib

Season with a crack of black pepper
