Preheat the grill to medium-high and boil half a kettle

Add your ground turmeric, 1/3 of your tomato paste and 1/3 of your natural yoghurt (you'll use the rest later!) to a large bowl with a pinch of salt and pepper and a small drizzle of vegetable oil – this is your tikka marinade

Bash your shiitake pulled mushrooms with a rolling pin to break them up

Add the bashed mushrooms to the tikka marinade and give everything a good mix up until fully coated

Add the marinated mushrooms to a tin foil-lined baking tray and put under the grill for 15-18 min or until cooked through and starting to char – this is your shiitake tikka

Add your basmati rice and 300ml [390ml] [600ml] cold water to a pot with a lid and bring to the boil over a high heat

Once boiling, reduce the heat to very low and cook, covered, for 10-12 min or until all the water has absorbed and the rice is cooked

Once cooked, remove from the heat and keep covered until serving

Peel and slice your shallot[s] finely

Heat a large, wide-based pan (preferably non-stick with a matching lid) with a drizzle of vegetable oil over a medium-high heat

Once hot, add your sliced shallot with a pinch of salt and cook for 5-6 min or until caramelised

Dice your cucumber finely

Chop your tomato[es] finely

Combine the diced cucumber and diced tomato with your mint sauce in a bowl

Season with a pinch of salt – this is your minty kachumber

Once the shallot has caramelised, add the remaining tomato paste, your curry powder and ginger & garlic paste with 1 tsp [1 1/2 tsp] [2 tsp] sugar and 1 tsp [1 1/2 tsp] [2 tsp] flour

Cook for 1-2 min or until fragrant

Once fragrant, add 200ml [250ml] [350ml] boiled water and your vegetable stock mix

Bring to a boil over high heat and cook for a further 5 min or until the sauce begins to thicken to a gravy-like consistency

Once thickened, remove the pan from the heat and stir through your garam masala, the shiitake tikka and the remaining natural yoghurt – this is your shiitake tikka masala

Serve the shiitake tikka masala with the basmati rice and minty kachumber to the side

Tip: For fancy presentation, press the rice into a small bowl and turn out
