Peri Peri Chicken, Red Pepper & Brown Rice With Garlic Mayo

Toaster, microwave or kettle-friendly – this is dinner without the cooking. You'll spike your cooked chicken, rice and roasted peppers with a hit of peri peri butter before serving up with salad and garlic mayo. Banging.

Cooked Brown Long Grain Rice

Before you begin, get all your ingredients and equipment ready

Skim through these steps, then wash your fruit and veg

You can only heat your food once, then enjoy straight away

Note: Microwave ovens vary. Make sure you heat food thoroughly (even if it takes you a little longer than 10 min)

Now, let's get started!

Peel and finely chop (or grate) your garlic

Add most of your chopped garlic (save a little for later!) to a large heatproof bowl with a generous knob of butter and your peri peri spice mix (can't handle the heat? Go easy!)

Put the bowl in the microwave for an initial 30 secs, then stir and return to the microwave for 20 secs or until the butter is completely melted – this is your peri peri butter

Add your tomato paste and give it a good mix up and set aside – this is your peri peri sauce

Squeeze your pouch[es] of cooked long grain rice to separate the grains

Tear the top corner of the pouch[es] (just a little!) and microwave for 2 min or until piping hot

Tip: If you're cooking two or more pouches, pop them in together but increase the microwave cook time accordingly

Meanwhile, add your mayo and the remaining garlic to a small bowl with a splash of water and a pinch of sugar, salt and pepper

Add a drizzle of olive oil and give everything a good mix up – this is your garlic mayo

Wash your salad, then pat dry with kitchen paper

Once the rice is piping hot, add the cooked rice to the bowl with the peri peri sauce

Add your cooked shredded chicken and your roasted red peppers with a generous pinch of salt and pepper

Give everything a good mix up until well combined, then put the bowl in the microwave for 30 secs - 1 min or until warmed through – this is your peri peri chicken, red pepper & rice

Serve the peri peri chicken, red pepper & rice in bowls and top with the garlic mayo and salad

Drizzle over a little olive oil
