Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

1

Before you begin...

This recipe takes around 5-10 min to prep, so get your ingredients ready, then wash your fruit and veg

Take your chicken out of the fridge, open the packet and let it air

Step 1
2

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Before you start cooking, take your chicken out of the fridge, open the packet and let it air

Chop your potatoes (skins on) into wedges

Step 2
3

Add the wedges to one side of the baking paper-lined baking tray (or two!) with a drizzle of vegetable oil and a pinch of salt and pepper and give everything a good mix up

Put the tray[s] in the oven for an initial 3-4 min

Step 3
4

Meanwhile, combine your peri peri spice mix with your honey, half the juice of your lemon[s](you'll use the rest later!) and a generous drizzle of olive oil

Add a generous pinch of salt and pepper, then give it a good mix up – this is your honey peri peri marinade

Add your chicken to the marinade and give it a good mix up until fully coated – this is your marinated chicken

Step 4
5

Once the wedges have had an initial 3-4 min, add the marinated chicken to the other side of the tray[s] with a drizzle of vegetable oil

Tip: Cooking for 3 or more? Use 2 trays!

Return the tray[s] to the oven for a further 25-30 min, or until the wedges are crispy and the chicken is cooked through (no pink meat!) – this is your honey & peri peri chicken and wedges tray bake

Step 5
6

Meanwhile, cut your remaining lemon in half

Combine your mayo with a squeeze of the lemon juice (save a little for later!) and a pinch of sugar, salt and pepper – this is your lemon mayo

Wash your lettuce, then pat it dry with kitchen paper and roughly shred

Step 6
7

Use this time to clear up, set the table, have a cup of tea or simply chill!

Step 7
8

Serve the honey peri-peri chicken breast with the wedges

Serve the shredded lettuce to the side with a drizzle of olive oil and a squeeze of lemon juice

Serve the lemon mayo to the side

Enjoy!
