Oven-Baked Golden Rosti With Sausages And Onion Gravy

Warm right up with a taste of the Swiss Alps. You'll lay juicy sausages on a bed of crispy golden potato rosti before serving with buttery green beans. Smother the lot with plenty of onion gravy and dig in.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Grate your potatoes

Add the grated potato to the middle of a tea towel and bring the four corners together to form a ball, then twist the ball and squeeze out as much liquid as you can

Add the squeezed potato to a bowl with a 1 tbsp [1 1/2 tbsp] [2 tbsp] flour, a very generous pinch of salt and a drizzle of vegetable oil

Give everything a good mix up – this is your rösti mix

Line an oven-proof dish with baking paper

Spoon the rösti mix into the dish and press firmly using your hand or the back of a spoon until the mix is compacted

Put the dish to one side of a baking tray and put in the oven for an initial 20-25 min or until the rösti is starting to go golden around the edges

Meanwhile, peel and finely slice your brown onion[s]

Add the sliced onion to a large piece of tin foil (or two!) with 1 tsp [1 1/2 tsp] [2 tsp] sugar, scrunch the foil around the onion to form a tightly sealed parcel

Trim your green beans

Cut a generous knob of butter into small pieces

Chop your chives finely

Once the rösti has had 20-25 min, remove the tray from the oven and add your hot dog sausage[s] and butter pieces to the top of the rösti

Add the onion parcel to the other side of the tray and return the tray to the oven for a further 25 min or until the rösti is golden and the sausage is cooked through (no pink meat!) – this is your sausage topped golden rösti and sweet onions

Once everything is nearly ready, add your trimmed green beans to a pot, cover them with boiled water (just enough to cover them)

Bring to the boil over a high heat and cook for 3-4 min or until tender

Once cooked, drain and return to the pan with a little butter and keep covered until serving – these are your buttery green beans

Combine your gravy base with 100ml [150ml] [200ml] boiled water in a heatproof bowl, whisk thoroughly

Put the gravy base in the microwave and cook for 30-40 secs or until thickened

Once thickened, add your sweet onions and give everything a good mix up (careful it may be hot!) – this is your onion gravy

Serve the sausage topped rösti and drizzle over your onion gravy

Serve the buttery green beans to the side

Garnish with the chopped chives and a dollop of the wholegrain mustard

Season with a generous pinch of pepper
