One Tray Smoky Chorizo & Egg Traybake With Salad

Whip up dinner in a flash with this smoky traybake. You'll roast potatoes, red onion and chorizo with smoked paprika and garlic. Crack in your eggs, bake till sizzling, and drizzle with garlicky mayo to serve.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7

Chop your potato[es] (skins on) into small bite-sized pieces

Peel and chop your sweet potato[es] into small bite-sized pieces

Peel and chop your red onion[s] into wedges

Peel and finely chop (or grate) your garlic

Add your chopped potato, sweet potato and onion wedges to a baking paper-lined tray (or two!)

Sprinkle over your diced chorizo, half the chopped garlic (save the rest for later!) and your ground smoked paprika

Add a generous drizzle of olive oil with a generous pinch of pepper and give everything a good mix up

Put the tray[s] in the oven for an initial 18-20 min or until everything's golden and crispy

Wash your salad, then pat dry with kitchen paper

Combine your mayo, remaining garlic (not a big garlic fan? Try using less!) and half your cider vinegar (you'll use the rest later!) in a bowl

Season with a generous crack of black pepper – this is your garlic mayo

After the initial 20 min, remove the tray[s] from the oven and make a well[s] in the vegetables, then crack your egg[s] into the well[s]

Return the tray[s] to the oven for 3-4 min or until the egg is done to your liking – this is your smoky chorizo & egg traybake

Serve the smoky chorizo & egg traybake on a plate with your salad to the side

Dollop over the garlic mayo and drizzle the remaining cider vinegar over the salad with a small drizzle of olive oil
