Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7 and boil half a kettle

Cut your potato[es] (skins on) into fries

Add the fries to a baking paper-lined tray (or two!) with a drizzle of vegetable oil and a pinch of pepper

Give everything a good mix up and put the tray in the oven for an initial 12-15 min

While your fries are cooking, add your panko breadcrumbs to a plate with your ground paprika and a generous pinch of salt and mix it all together

Coat your chicken in olive oil and press them into the breadcrumbs firmly to coat evenly – this is your breaded chicken

Slice your green chilli[es] finely

Tip: Not a fan of spice? Remove the seeds!

Add the sliced chilli to a large bowl with your white wine vinegar, a pinch of sugar and a splash of boiled water – this is your quick-pickled green chilli

Once the fries have had an initial 12-15 min, push them to one side of the tray[s]

Add the breaded chicken to the other side of the tray[s] and return to the oven for 10 min further

Meanwhile, peel and finely chop (or grate) your garlic

Chop your basil finely, including the stalks (save some whole leaves for garnish!)

Grate your cheddar cheese

Drain your mozzarella, then pat and squeeze as much liquid out as you can with kitchen paper

Tear the drained mozzarella into rough, bite-sized pieces

Add your chopped tomatoes to a bowl with the chopped garlic, chopped basil and a generous pinch of sugar, salt and pepper

Give everything a good mix up and microwave for 1-2 min or until slightly thickened – this is your marinara sauce

Set aside 4 tbsp [6 tbsp] [8 tbsp] marinara sauce in a small bowl for your breaded chicken

Once the chicken has had 10 min, remove the tray[s] from the oven and top the fries with the grated cheese, your sliced pepperoni and the quick-pickled green chilli (reserve the pickling liquid!)

Top the breaded chicken with the reserved marinara sauce and most of the torn mozzarella

Add your dough balls to the tray[s] (set the dip aside so it comes to room temperature) and top with the remaining torn mozzarella, then put the tray[s] in the oven for a final 5-7 min or until everything is golden brown and the chicken is cooked through (no pink meat!)

Wash your salad, then pat dry with kitchen paper

Add your mayo to the bowl with the reserved pickling liquid and mix until fully combined – this is your creamy dressing

Add the salad to the bowl with the creamy dressing and toss until everything is coated in the dressing – this is your dressed salad

Serve the chicken parm with the reserved basil leaves torn over the top and remaining marinara sauce to the side

Serve the pepperoni fries and drizzle your tomato ketchup all over

Serve the cheesy dough balls with the dip and dressed salad to the side
