One Pot Sweet & Sour Pork With Rice

This takeaway-style dinner practically cooks itself. You'll slow-cook tender pork with peppers, onions and juicy pineapple in a sticky, sweet and sour sauce, before serving it over fluffy rice with a sprinkle of sesame seeds. Delicious.

Before you begin...

This recipe takes around 5-10 min to prep, so get your casserole dish and all your ingredients ready, then wash your fruit and veg

Note: Make sure your dish is oven-proof and safe to use on the hob. Don't have one? Start cooking in a large, wide-based pan then transfer to an oven-proof dish and cover tightly with foil

Now, let's get started!

Preheat the oven to 220°C/ 200°C (fan)/ gas 7 and boil a kettle

Heat a large, wide-based hob-safe oven-proof casserole dish with a matching lid with a drizzle of vegetable oil over a high heat

Once hot, add your diced pork shoulder with 1 tbsp [1 1/2 tbsp] [2 tbsp] flour and cook for 2-3 min or until lightly browned

Meanwhile, deseed your pepper[s] (scrape the seeds and pith out with a teaspoon) and roughly chop

Peel and chop your brown onion[s] into wedges

Peel and finely chop (or grate) your garlic

Remove your pineapple from the can (save the juice!) and chop roughly

Once the pork has browned, add the diced pepper, wedged onion, chopped garlic and chopped pineapple to the dish and cook for 1 min or until starting to soften

Once softened, add your soy sauce, tomato ketchup, Henderson's relish, ground paprika and rice vinegar with 400ml [520ml] [680ml] boiled water and stir it all together

Add 25ml [30ml] [40ml] reserved pineapple juice with a generous pinch of salt and bring to the boil over a high heat, cover with the lid and put the dish in the oven for an initial 25 min

Once the pork has had 25 min, reboil a kettle and remove the dish from the oven

Season with a generous pinch of salt and stir it all together

Return the sweet & sour pork to the oven, uncovered, for a final 25-30 min or until the sauce has thickened and the pork is cooked through – this is your one pot sweet & sour pork

Meanwhile, add your white long grain rice to an oven-proof dish with 300ml [390ml] [600ml] boiled water

Cover tightly with tin foil and put the dish in the oven for 25-30 min or until all the water is absorbed and the rice is cooked – this is your baked rice

Serve the one pot sweet & sour pork with the cooked rice to the side

Garnish with toasted sesame seeds
