You'll also need

Butter, Olive oil, Pepper, Salt, Vegetable oil, Water (or dietary alternatives)

Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Peel and finely chop (or grate) half your garlic (you'll use the rest later!)

Add your chicken mince to a large bowl with the chopped garlic, half your peri peri spice mix (you'll use the rest later!) and your panko breadcrumbs

Add a pinch of salt and pepper and a drizzle of olive oil and give everything a good mix up until well combined

Divide and shape into meatballs (6 per person!) – these are your chicken meatballs

Heat a pot (with a matching lid) over a medium-high heat with a drizzle of vegetable oil

Add the chicken meatballs and cook the meatballs for 2-3 min on each side or until browned

Tip: Cooking for 3 or more? Use 2 pots!

Once browned, transfer the browned meatballs to a plate and reserve the pot

While the meatballs are browning, deseed your pepper[s] (scrape the seeds and pith out with a teaspoon) and dice

Peel and finely chop (or grate) your remaining garlic

Peel and finely slice your brown onion[s]

Return the reserved pot to a medium-high heat with a little drizzle of vegetable oil

Once hot, add the diced pepper and sliced onion and cook for 3-4 min or until softened

Once softened, add the chopped garlic with your tomato paste, ground smoked paprika and white long grain rice and cook for 1 min or until fragrant

Once fragrant, add 350ml [530ml] [700ml] cold water, your chicken stock mix and a generous pinch of salt and pepper

Give it a good mix up and bring to the boil over a high heat

Once boiling, give everything a good mix up, then top with the browned meatballs

Reduce the heat to low and cook, covered, for 12-15 min or until the rice is cooked and the chicken is cooked through (no pink meat!)

Once cooked, set aside for 4-5 min with the lid on

Once ready, season with your smoked sea salt flakes – this is your one pot peri peri chicken meatballs with smoky rice

While the rice is cooking, trim, then slice your spring onion[s]

Add a generous knob of butter to a bowl with and a small pinch of salt

Put the bowl in the microwave for 30 secs or until the butter has melted

Once melted, add the remaining peri peri spice mix (can't handle the heat? Go easy!) and mix

Add your mayo and a small splash of water and give everything a good mix up – this is your peri-naise

Serve the one pot peri peri chicken meatballs with smoky rice and top with the sliced spring onion

Serve the peri-naise to the side
