One Pan Creamy Salmon Florentine

Go heavy on flavour and light on washing up with this one pan take on a Mediterranean classic. You'll cook orzo in a creamy sauce, packed with spinach, basil and cherry tomatoes then top with a steamed salmon fillet.

Cooking instructions

Boil a kettle

Peel and finely chop your brown onion[s]

Peel and finely chop (or grate) your garlic

Step 1

Heat a large, wide-based pan (preferably non-stick with a matching lid) with a drizzle of olive oil over a medium heat

Once hot, add the chopped onion and cook for 5 min or until softened

Once softened, add the chopped garlic and cook for 1 min further

Meanwhile, dissolve your vegetable stock mix in 500ml [650ml] [850ml] boiled water

Add your soft cheese, orzo and vegetable stock to the pan and give everything a good mix up until fully combined, then cook for 6-7 min

Tip: Stir occasionally to stop the orzo sticking to the pan!

Meanwhile, cut your cherry tomatoes in half

Wash your spinach, then pat it dry with kitchen paper and chop it roughly

Tear your basil leaves

Grate your cheddar cheese

Add the chopped spinach, halved tomatoes and grated cheese to the orzo with half the torn basil leaves (save the rest for garnish!)

Season with a generous pinch of salt, give everything a good mix up and cook for 2-3 min or until the spinach has wilted

Meanwhile, season your salmon fillet[s] with a pinch of salt and pepper

Lay the salmon over the spinach & tomato orzo and cook, covered, for 9-10 min further or until the salmon is cooked through – this is your creamy salmon florentine

Tip: Your fish is cooked when it turns opaque and flakes easily!

Serve the creamy salmon florentine and garnish with the remaining torn basil

Season with a grind of black pepper
