New England-Style Prawn Roll With Buttery Potatoes
Toaster, microwave or kettle-friendly – this is dinner without the cooking. You'll pack fluffy brioche buns with creamy cooked prawns. Finish with a pinch of smoked paprika, fresh chives and a squeeze of lemon, then serve with buttered potatoes and gem lettuce.

Now, let's get started!
Chop your waxy potatoes into quarters
Add the chopped potatoes to a large heatproof bowl, then cover the bowl with cling film and pierce a few holes in the top with a fork
Put the bowl in the microwave for 7-8 min or until the potatoes are fork-tender

Roll your lemon[s] with your hand on a hard surface (to release more juice) and cut in half
Chop your chives finely

Wash then remove leaves (1 per person!) from your lettuce and set aside, roughly shred the inner core[s]

Once the potatoes are tender, add a knob of butter with half your ground smoked paprika (you'll use the rest later!) and a pinch of salt and pepper
Give them a good mix up – these are your buttery potatoes

Add a knob of butter with most of the remaining ground smoked paprika (save a small pinch for a garnish!) to a heatproof bowl, put the bowl in the microwave and cook for 20-30 secs or until the butter is melted
Give it a good mix up, then add your mayo with a squeeze of lemon juice and most of the chopped chives (save a little for a garnish!) with a generous pinch of salt and pepper, give everything a good mix up, then drain and add your cooked prawns – these are your New England-style prawns

Slice your hot dog bun[s] down the centre, being careful not to cut all the way through to the other side and open it out like a book

To build your roll, place a lettuce leaf down the centre of the hot dog bun and top with the New England-style prawns, garnish with the reserved ground smoked paprika and reserved chives
Serve the buttery potatoes and shredded lettuce to the side
Cut the remaining lemon into 1 wedge per person, then garnish with a lemon wedge
