Preheat the oven to 220°C/ 200°C (fan)/ gas 7 and take your gammon joint[s] out of the fridge, open the packet and let it adjust to room temperature and pat dry with kitchen paper

Cut 2 pieces of tin foil approx. the size of A4 paper and lay them, overlapping, on a large baking tray

Add your gammon joint[s] to the middle of the foil (doubling it up prevents any leakages!)

Scrunch the edges of the foil around the gammon joint[s] to form a tightly sealed parcel

Tip: Cooking for 3 or more? Make separate parcels!

Put the tray in the oven for an initial 35 min

While the gammon is cooking, trim your green beans

Peel and finely chop your spring onion[s]

Combine your wholegrain mustard and honey in a small heatproof bowl with a drizzle of olive oil – this is your mustard & honey glaze

Boil a full kettle

Peel your potatoes and chop them into large, bite-sized pieces

Add the chopped potatoes to a pot with plenty of boiled water and bring to the boil over a high heat

Once boiling, reduce the heat to medium and cook for 12-15 min or until fork-tender

Once done, drain and return to the pot to steam dry

After the initial 35 min, remove the tray[s] from the oven and open the foil parcel (careful, it will be hot!)

Remove the net using scissors and discard, then pour the mustard & honey glaze over the roast gammon (reserve the bowl!)

Add the trimmed green beans to the foil on the baking tray and turn in the meat juices

Return the tray to the oven for 10-12 min or until the gammon is golden and cooked through and the green beans are tender with a bite – this is your mustard & honey glazed gammon

While the gammon is in the oven, reboil half a kettle

Return the potatoes to a low heat with your clotted cream and a splash of milk

Season with a generous pinch of salt and mash until smooth

Stir through the sliced spring onion – this is your champ mash

Combine your gravy base with 150ml [225ml] [300ml] boiled water in the reserved bowl, whisk thoroughly

Put the gravy mix in the microwave and cook for 1 min or until thickened

Give everything a good mix up (careful it may be hot!) – this is your mustard & honey gravy

Slice the mustard & honey glazed gammon finely

Serve the sliced mustard & honey glazed gammon with the champ mash and green beans to the side

Pour over the mustard & honey gravy
