Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

1

Preheat the oven to 200°C/ 180°C (fan)/ gas 6 and boil a kettle

Add your meat-free sausages to a baking tray (use tin foil to avoid mess!)

Tip: Cooking for 4? Use 2 trays!

Put them in the oven for 25-30 min or until they are browned

Alternatively, cook your meat-free sausages on the BBQ!

Step 1
2

While the sausages are in the oven, peel and finely slice your red onion[s]

Heat a large, wide-based pan (preferably non-stick) with 1 tbsp [1 1/2 tbsp] [2 tbsp] olive oil over a medium heat

Once hot, add the sliced onion with a pinch of salt

Cook for 5 min, or until the onion has softened

Step 2
3

Meanwhile, chop your waxy potatoes into wedges

Add the chopped potatoes to a pot of plenty of boiled water with a pinch of salt and bring to the boil over a high heat

Once boiling, cook for 12-15 min or until fork-tender, then drain and return to the pot

Keep covered until serving

Step 3
4

Once the onion is softened, add 1 tsp [1 1/2 tsp] [2 tsp] sugar, your onion marmalade, red wine vinegar, Henderson's Relish and 2 tbsp [3 tbsp] [4 tbsp] water

Reduce the heat to low and cook the onions for a further 20 min, or until they're sticky and sweet – these are your caramelised onions

Step 4
5

Whilst the onions are cooking, combine your mayo, wholegrain mustard and white wine vinegar with 1 tbsp [1 1/2 tbsp] [2 tbsp] olive oil and a pinch of salt and pepper in a bowl – this is your dressing

Step 5
6

Wash your salad, then pat it dry with kitchen paper

Trim, then slice your spring onion[s] finely

Step 6
7

Once cooked, add the drained potatoes to a bowl with the salad, sliced spring onions and dressing, then mix gently – this is your warm potato salad

Step 7
8

Serve the warm potato salad, top with the cooked meat-free sausages and serve the caramelised onions to the side

Enjoy!
