Hunters Chicken With Nutty Sweet Potato Mash & Greens

Get a taste of your local with some proper pub grub. You'll bake your chicken before smothering it in a smoky BBQ sauce with plenty of cheese. Serve it with sweet potato mash and garlicky greens. Cooking instructions

Instructions for 2 [for 3] [for 4] portion recipe.

Preheat the oven to 220°C/ 200°C (fan)/ gas 7 and boil a kettle

Take your chicken out of the fridge, open the packet and let it air

Peel and chop your sweet potato[es] into bite-sized pieces

Peel and finely chop (or grate) your garlic

Add your chicken to the middle of the 2 pieces of tin foil (doubling it up prevents any leakages!) then loosely scrunch the edges of the tin foil around the chicken leaving the top exposed

Add the chicken to a tray (or two!)

Drizzle with vegetable oil and season with a pinch of salt and pepper, then put the tray[s] in the oven for an initial 8-10 min

Add the chopped sweet potato to a pot of boiled water over a high heat and bring to the boil

Cook for 10-15 min or until fork-tender

Once done, drain, return them to the pot and cover to keep warm

Wash your spring greens, then pat it dry with kitchen paper, rip the leaves off the spring greens, discard the tough stalks, then layer the leaves over each other, roll them up and slice into thin strips

Add the sliced spring greens and chopped garlic to a large piece of tin foil (or two!) with a generous splash of cold water and scrunch the foil around the spring greens to form a tightly sealed parcel

After the chicken has had 8-10 min, remove the tray[s] from the oven and add the tin foil parcel[s] to the other side of the tray[s]

Return the tray[s] to the oven for 10-12 min or until the spring greens are tender and the chicken is cooked through (no pink meat!)

Meanwhile, grate your lighter cheese

Combine your BBQ sauce and tomato paste in a small bowl with 2 tbsp [3 tbsp] [4 tbsp] water and stir it all together – this is your Hunter's sauce

Once everything is nearly ready, add a small knob of butter with a generous pinch of salt to the cooked potato and mash until smooth

Tip: If the mash has cooled down, warm it through over a low heat, stirring constantly

Add most of your pine kernel and seed mix (save the rest for garnish!) and stir it all together – this is your nutty sweet potato mash

Once the chicken is cooked, remove the tray[s] from the oven and spoon most of the Hunter's sauce (you'll use the rest later!) over the chicken and sprinkle with the grated lighter cheese

Return the tray[s] to the oven for a final 2-3 min or until the cheese is melted – this is your Hunter's chicken and garlicky greens

Serve the Hunter's chicken with the nutty sweet potato mash and garlicky greens to the side

Spoon the remaining Hunter's sauce over the chicken, garnish with the remaining pine kernel and seed mix and finish with a pinch of pepper
