Preheat the oven to 200°C/ 180°C (fan)/ gas 6

Cut your potatoes (skins on) into chips

Add the chips to a baking tray (or two!) with a drizzle of vegetable oil and a very generous pinch of salt and pepper and give everything a good mix up

Put the tray[s] in the oven for 25-30 min or until golden and crispy – these are your black pepper chips

Zest half your lime[s] (try to grate lightly with a micro-plane or sharp box grater and avoid grating the white pith, as this is very bitter), then cut in half

Add your carrot & cabbage slaw mix and lime zest to a bowl with a squeeze of lime juice, 1 tsp [1 1/2 tsp] [2 tsp] sugar and a drizzle of olive oil

Season with a pinch of salt and give everything a good mix up – this is your zesty slaw

Combine your honey and sriracha (can't handle the heat? Go easy!) in a small bowl – this is your hot honey

Add your peanut butter to a separate small bowl with a splash of warm water and a squeeze of lime juice and stir it all together – this is your peanut drizzle

Once the chips have had 20 min, heat a large, wide-based pan (preferably non-stick) over a high heat

Once hot, add your wagyu burger[s] and cook for 6 min on each side, or until nicely browned

Tip: Cooking for 3? You may need to do this in batches!

Slice your brioche bun[s] in half (if required!)

Once everything is nearly ready, remove the tray[s] from the oven and add the brioche halves

Return the tray[s] to the oven for 1-2 min or until warmed through

To build the burger, top the warmed brioche bun base with a little zesty slaw and a wagyu patty

Divide the peanut drizzle and hot honey (not a fan of spice? Just add a little!) evenly between the burger and top with the warmed brioche bun lid

Serve the black pepper chips and the remaining slaw to the side
