Now, let's get started!

Chop your waxy potatoes in half

Add the chopped potatoes to a heatproof bowl, then cover the bowl with cling film and pierce a few holes in the top with a fork

Put the bowl in the microwave for 6-8 min or until the potatoes are fork-tender

Meanwhile, slice your cucumber finely

Chop your chives finely

Wash your spinach and pat it dry with kitchen paper

Combine your wholegrain mustard, the juice of half your lemon[s] and your honey in a large bowl with a generous drizzle of olive oil and a pinch of salt and pepper – this is your honey mustard dressing

Add the spinach and sliced cucumber to the honey mustard dressing and gently toss it all together – this is your honey mustard salad

Once the potatoes are fork-tender, add your mayo, most of the chopped chives (save some for garnish!) and a pinch of salt and pepper

Gently stir it all together – this is your chive potato salad

Cut the remaining lemon into 1 wedge per person

Serve the honey mustard salad and chive potato salad with your salmon flakes on top

Spoon any remaining honey mustard dressing over the salmon

Garnish with the remaining chopped chives and a lemon wedge
