Harissa Glazed Cauliflower Tray Bake With Couscous & A Chicken Breast

Spicy, fragrant roasted cauliflower stars in this mouthwatering tray bake. You'll roast it and finish it with a sticky harissa glaze, before serving with aromatic roast veg, crunchy flaked almonds and harissa yoghurt. Serve with a chicken breast.

Preheat the oven to 200°C/ 180°C (fan)/ gas 6

Peel and chop your red onion[s] into wedges

Top, tail and slice your courgette[s] into rounds

Chop your cauliflower[s] into 4 wedges per person - discard the caulifower leaves

Added chicken? Cook at 220°C / 200°C (fan) / gas 7 for 18-20 min

Add the onion wedges, courgette rounds and cauliflower wedges to baking tray[s]

Sprinkle over your smoked paprika, a drizzle of olive oil and a pinch of salt and pepper and give it a good mix up until everything is coated

Put the tray[s] in the oven for an initial 10-15 min or until beginning to brown

Boil half a kettle

Heat a small pot over a medium heat with your harissa paste, honey and large knob of butter

Cook for 2-3 min stirring continuously until the glaze has thickened and the butter has melted

Once thickened, add the juice of half your lemon – this is your harissa glaze

Add your couscous and vegetable stock mix to a heatproof bowl with 130ml [170ml] [220ml] boiled water, cover and set aside

Fluff with a fork before serving

Once the veg is beginning to brown take the tray[s] out of the oven

Set 1 tbsp [1.5 tbsp] [2 tbsp] of the harissa glaze aside (you'll use it later!) and drizzle the remaining harissa glaze over the veg and give everything a good mix up

Put the tray[s] back in the oven for 10-15 min or until softened

Meanwhile, strip your mint leaves from their stems and finely chop, discard the stems

Chop your parsley finely, including the stalks

In a bowl mix your yoghurt with the reserved harissa glaze – this is your harissa yoghurt

Once the couscous is cooked, add most of the chopped mint and chopped parsley (save some for garnish!) and give it a good mix up

Once your veg has softened, remove the tray[s] from the oven and add your flaked almonds, then cook for a further 5-6 min or until the almonds are toasted and golden – this is your harissa cauliflower tray bake

Tip: Watch the flaked almonds like a hawk to make sure they don't burn!

Cut the remaining lemon into one wedge per person

Serve the harissa cauliflower tray bake over the herby couscous

Drizzle the harissa yoghurt all over and garnish with the lemon wedge and remaining chopped mint and parsley
