Halloumi Tacos With Peri Peri Mayo
Check out this halloumi hero - you'll wrap up pan-fried halloumi, sweetcorn salsa, creamy avocado and peri peri mayo in soft tortillas. Taco 'bout tasty!

Before you begin...
Get all your ingredients and equipment ready
Skim through these steps, then wash your fruit and veg
Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 min)

Now, let's get started!
Add the mayo, smoked paprika, oregano, chilli flakes (can't handle the heat? Go easy!) and cider vinegar to a small bowl
Add 1 tbsp [2 tbsp] olive oil, 1 tbsp [2 tbsp] water and a pinch of salt
Give it a good mix up – this is your peri peri mayo

Drain and rinse the sweetcorn
Slice the spring onion[s] finely
Cut the lime[s] in half
Cut 1/2 [1] lime into 2 [4] wedges

Add the drained sweetcorn and chopped spring onion to a bowl
Add the juice of the lime half[ves] (save the wedges for later!) and a pinch of salt, give it a good mix up – this is your sweetcorn salsa

Cut the avocado[s] in half lengthways, around the stone[s]
Remove the stone[s] using a teaspoon
Scoop the avocado out of the skin[s] using a spoon and slice it finely, lengthways

Heat a large, dry, wide-based pan (preferably non stick) over a high heat
Cut the halloumi into 12 [24] slices
Once hot, add the halloumi slices
Cook for 1-2 min on each side or until golden

Add the tortillas to a plate
Put the plate in the microwave and cook for 1-2 min, or until warmed through (alternatively, add the tortillas to a baking tray and put them in the oven for 2-3 min!)

Add the golden halloumi to the warmed tortillas
Top with the sweetcorn salsa and sliced avocado
Drizzle over the peri peri mayo and serve the lime wedges to the side
