Before you begin...

Get all your ingredients and equipment ready

Skim through these steps, then wash your fruit and veg

Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 min)

Added chicken? Cook at 220°C / 200°C (fan) / gas 7 for 18-20 min

Now, let's get started!

Boil a kettle, then grate your cucumber

Strip your mint leaves from their stems and chop them roughly, discard the stems

Cut your lemon[s] into wedges

Add your vegetable stock mix to a heatproof bowl with your sultanas, chopped dates and couscous

Add 250ml [375ml] [500ml] boiled water, give everything a good mix up, cover and set aside for later – this is your fruity couscous

Add your natural yoghurt to a bowl with the grated cucumber and chopped mint

Add a drizzle of olive oil and the juice of half the lemon wedges and stir it all together – this is your tzatziki

Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a high heat

Cut your halloumi into 3 slices per person

Once hot, add the halloumi slices and cook for 1-2 min on each side or until golden

Whilst the halloumi is cooking, dice your tomato[es] finely

Chop your dill roughly, including the stalks

Add your flaked almonds and diced tomato to the fruity couscous with a generous drizzle of olive oil and a big squeeze of lemon juice and fluff everything up with a fork

Serve the golden halloumi with the tzatziki and fruity couscous to the side

Garnish with the chopped dill and a lemon wedge
