Fragrant Chickpea Tagine & Grains
This super-quick tagine is packed with chickpeas, pre-chopped Mediterranean veg and fragrant spices. Serve with our wholesome five grain mix, flaked almonds and sweet mango chutney.

Instructions for 2 [for 3] [for 4] portion recipe.
Boil half a kettle
Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a medium-high heat
Once hot, add the Mediterranean veg mix with a pinch of salt and cook for 2-3 min until starting to soften

Meanwhile, drain and rinse the chickpeas
Add the 5 grain mix to a large, heatproof bowl and put the bowl in the microwave for 3-4 min or until piping hot

Once the veg has started to soften, add the ginger & garlic paste and ras el hanout and cook for 1 min until fragrant
Once fragrant, add the drained chickpeas and diced apricots and cook for 1 min further

Add the finely chopped tomatoes, vegetable stock mix and 100ml [200ml] boiled water and bring to the boil over a high heat
Cook for 2 min until the sauce has thickened – this is your chickpea tagine

Serve the chickpea tagine over the 5 grain mix with a dollop of mango chutney
Sprinkle with the flaked almonds and tear over the parsley
Enjoy!
