Firecracker Cauliflower Stir-Fry With Edamame & Jasmine Rice
For a super speedy dinner, try this hot and sticky cauliflower on a bed of fluffy rice. Your ingredients are pre-chopped so the cooking's done lightning fast, then just top with roasted peanuts to serve.

Instructions for 2 portion recipe.
Heat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a high heat
Once hot, add the chopped pepper & onion and cook for 2-3 min or until starting to soften

Meanwhile, combine the agave, tamari soy sauce, cayenne pepper (can't handle the heat? Go easy!) and sriracha in a small bowl
Add the cornflour and give everything a good mix up – this is your firecracker sauce

Add the edamame & jasmine rice to a large, heatproof bowl and put the bowl in the microwave for 2-3 min or until piping hot

Once the pepper and onion has softened, add the chopped cauliflower and cook for 1 min or until warmed through
Add the firecracker sauce and cook for 1-2 min further or until thick and sticky – this is your firecracker cauliflower stir-fry

Serve the firecracker cauliflower stir-fry over the warmed edamame & jasmine rice
Garnish with the roasted peanuts
