Easy Jumbo King Prawn Biryani

Biryani is the paella of Indian food. Traditionally, it's baked in a clay pot for hours, but our easy twist with succulent jumbo prawns is ready in thirty minutes!

Peel and dice your brown onion[s]

Heat a large, wide-based pan (preferably non-stick with a matching lid) with a generous drizzle vegetable oil over a high heat

Once hot, add the diced onion, your curry powder and a small pinch of salt and pepper

Cook for 2 min or until starting to soften

Meanwhile, trim and cut your green beans in half

Sprinkle your vegetable stock mix into the pan and add your tomato paste

Tip: Add a drizzle of oil if the pan looks a little dry

Stir in your basmati rice

Add 300ml [390ml] [600ml] cold water to the pan and bring to the boil over a high heat

Add the halved green beans and sultanas

Once boiling, reduce the heat to very low and cook, covered, for an initial 10-12 min or until most of the water has absorbed

Once the rice has absorbed most of the water, increase the heat to medium-high then drain your jumbo prawns and add them to the pan and cook, covered, for a further 6-7 min or until everything's cooked through

Tip: Add a splash more water if the rice is not fully cooked or the mixture is looking a little dry

Once cooked, fluff the rice with a fork

Taste for seasoning, adding more salt and pepper if needed – this is your jumbo prawn biryani

Serve the jumbo prawn biryani with a dollop of your natural yoghurt on top
