Easy Bacon & Asparagus Tarte Flambée

This quick spring supper is inspired by an Alsatian classic. Tarte Flambée is traditionally made from thin bread dough, topped with a creamy sauce, bacon and onion. You'll use naan as a speedy alternative, add fresh British asparagus and serve with lamb's lettuce salad and a balsamic dressing. Délicieuse!

Cooking instructions

Instructions for 2 portion recipe.

Preheat the oven to 200°C/ 180°C (fan)/ 395°F/ Gas 6

Preheat a large, wide-based pan (preferably non-stick) with a drizzle of vegetable oil over a medium heat 

Once hot, add the bacon lardons and cook for 5 min or until starting to crisp  

Once crisp, remove the pan from the heat and set aside

Meanwhile, add the naan breads to a baking tray and put them in the oven for 5 min

Meanwhile, slice the asparagus spears until you reach the tips – keep the tips whole

Peel and chop (or grate) the garlic

Peel and slice the shallot[s]

Add the natural yoghurt, soft cheese, dried oregano, chopped garlic (Don't like raw garlic? Go easy!) and a generous pinch of salt and pepper to a bowl 

Give everything a good old mix up – this is your creamy base

Add the chopped asparagus and shallot to the bacon pan and give everything a good mix up

Remove the baking tray from the oven and spread the creamy base over the naan breads

Top with the asparagus & bacon mixture and put the tray in the oven for a further 10-12 min or until crispy – this is your bacon & asparagus tarte flambée

Meanwhile, combine the Dijon mustard and balsamic vinegar with 2 tbsp [4 tbsp] olive oil, 1 tsp [2 tsp] sugar and a generous pinch of salt and pepper in a small bowl – this is your balsamic dressing

Wash, then pat the lamb's lettuce dry

Dress the lamb's lettuce with the balsamic dressing and serve alongside the bacon & asparagus tarte flambée
