Creamy Rosemary Pork & Broccoli Mafaldine

This rosemary pork and broccoli mafaldine is weeknight magic in a bowl. You'll brown pork mince with fragrant rosemary, before folding it into a silky soft cheese sauce. Toss it with tender broccoli and pasta to finish. Perfect.

Before you begin...

Get all your ingredients and equipment ready

Skim through these steps, then wash your fruit and veg

Note: Equipment and pan sizes vary. Make sure you cook food thoroughly (even if it takes you a little longer than 10 min)

Now, let's get started!

Boil a kettle

Heat a large, wide-based pan (preferably non-stick) with a drizzle of olive oil over a very high heat

Once hot, add your mince (remove the paper if required!) and your rosemary (chuck it in, stalks and all!) with a pinch of sugar

Cook for 5-6 min or until beginning to brown, breaking it up with a wooden spoon as you go

While the mince is browning, peel and slice your shallot[s] finely

Peel and finely chop (or grate) your garlic

Cut your broccoli into small florets

Add your mafaldine to a pot of boiled water and bring to the boil over a high heat

Cook the pasta for an initial 3-4 min

Reboil half a kettle

Meanwhile, reduce heat to medium-high and add the sliced shallot to the pan with the mince and cook for 2-3 min or until slightly softened, once slightly softened, add the grated garlic and cook for 1-2 min or until fragrant

Once the pasta has had an initial 4 min, add the broccoli florets to the pot and cook for a further 4-5 min or until cooked with a slight bite

Once done, drain the mafaldine & broccoli, reserving a cup of the starchy pasta water

Once fragrant, add your soft cheese, most of your Chinese rice wine (save the rest for garnish!) and 150ml [195ml] [255ml] boiled water to the pan

Season with a generous grind of black pepper and a generous pinch of salt and stir everything together

Cook for 1-2 min or until slightly thickened and the mince is cooked through (no pink meat!)

Grate your Italian hard cheese

Wash your salad, then pat dry with kitchen paper

Once everything is cooked, add the cooked mafaldine & broccoli to the pan with 100ml [150ml] [200ml] reserved starchy pasta water and your chicken stock mix and gently mix it all together – this is your creamy rosemary pork & broccoli mafaldine

Discard the rosemary stalks

Serve the creamy rosemary pork & broccoli mafaldine with the salad to the side

Garnish the pasta with the grated Italian hard cheese and season with a pinch of salt

Drizzle the salad with the remaining Chinese rice wine
